1.5 oz Dulce Oro Reposado
1 oz Giffard Pamplemousse
0.75 oz grapefruit juice
0.5 oz lime juice
0.25 oz dragon fruit
0.25 oz Dulce Oro Mezcal
4 sprays saline
pinch of Tajín
Garnish
Tajín rim, dehydrated citrus wheel
Method
Rim a chilled coupe with Tajín. Combine all ingredients in a shaker with ice and shake vigorously. Double strain into the rimmed coupe. Garnish with a dehydrated citrus wheel.
Bartender’s Notes
Mezcal as a 0.25 oz accent gives smoke without taking over; the Tajín rim ties the smoke and citrus together. Saline spray cuts the bitterness from the grapefruit and pamplemousse so the agave can sit forward.
