1 oz house-made ube coconut lychee syrup
0.5 oz lychee milk
0.25 oz lemon juice

Speciality Recipe
Ube Coconut Lychee Syrup — Combine equal parts coconut cream and lychee juice (or syrup from canned lychees) with cooked/grated purple yam (ube) and roughly 1:1 sugar to total liquid. Gently simmer until the ube softens and releases color, then blend smooth and strain through fine mesh. Cool before use. Lychee milk is made by infusing whole milk with lychee fruit and a touch of sugar overnight, then straining.

Method
Add tequila, ube coconut lychee syrup, lychee milk, and lemon juice to a shaker with ice. Short shake to chill and integrate. Strain into a chilled wine glass over fresh ice. Add a splash of soda water, then top with prosecco.
Bartender’s Notes
The violet color is the showstopper — ube does the visual work, coconut and lychee carry the body, and prosecco lifts it into spritz territory. Build the syrup ahead in batch; once the syrup is dialed in, this drink is fast at the well.
